Henry & Gray had the opportunity to work with Botswana Butchery who wants to give a new look to their existing uniforms with a quality shirt and apron solution for their front-of-house team.

We had been working with their parent company, Good Group Hospitality, and also with their other sister companies, Harbourside and White + Wong's brands, and that is where they found out about us.

The Client

Botswana Butchery has restaurants in New Zealand and Australia offering a diverse menu full of flavour with locally sourced ingredients and fine cuts straight from the butchers block. The restaurant brings a taste of Australia’s and New Zealand’s best produce and wine. Their branches located in Auckland City NZ, Queenstown NZ, Sydney and Melbourne, Australia offer lunch, dinner and bar menus in gorgeous surroundings. Botswana Butchery is all about relaxed dining in a premium atmosphere.

The Brief

The client’s main requirements were for a black, hard-wearing shirt that will not fade quickly as well as a quality black waist apron. Over time, a chef's bib apron and jacket have been added as well as manager shirts and dresses in their Australian restaurants.

The Solution

The team at Henry & Gray selected a very specific black poplin fabric in 60% Cotton and 40% polyester for the shirts to ensure the right mix of comfort and ease of wash and wear. We designed a slim-fit shirt style that could be worn tucked in or untucked and added tab sleeves to ensure consistency if the sleeves were rolled up.

For the aprons, we have selected a specific 65% Polyester and 35% Cotton hard-wearing twill fabric in black to ensure they will last in a hospitality environment. In addition, we added cool vent chefs’ jacket and hard-wearing chef's aprons to ensure the back-of-house team were both on brand and in a uniform that suits their environment.

The Outcome

It was all about finding the right fabrics and styles for the environment, particularly with the shirt and waist apron. It was important to spend time on getting the fabric, style and design right. This has allowed us to maintain the same items predominantly over 5-plus years. Safe to say, the client was pleased and content with the result.
